About Chef Wallace | 

Chef Wallace’s passion is to produce amazing, unforgettable food. He enjoys combining his traditional training with his Caribbean heritage and culinary travels. After over 19 years in the culinary world, Wallace is very excited to be back in his own kitchen.

Chef Wallace graduated from Johnson & Wales University in Providence, Rhode Island where he received his degrees with Distinction in Culinary Arts and Food Services Management.  Born and raised on the beautiful island of St. Croix in the United States Virgin Islands, Wallace returned home after college to refine his craft and share his experience and travels. For over 13 years on the island, Chef Wallace pushed the limits of the local Crucian cuisine – receiving numerous awards at the annual Taste of St. Croix, and mentoring many of the island’s upcoming culinarians. After relocating to Ocala, Chef Wallace focused on the needs of his family before returning to the helm of the kitchen as the Executive Chef at the Salted Brick, and then at HITS Ocala.

Wallace, his wife Stefanie, and their three children are overjoyed to be part of the Homosassa and larger Citrus County community.
